May 20, 2005 – The H2O restaurant, located on the road to Manor school in Estate La Grand Princess, offers the discriminating diner seaside ambiance, bright blue skies or star filled nights, and the peaceful sounds of the surf lapping over a white sand beach. The restaurant itself reminds one of an open bamboo hut, like on Gilligan's Island – only a bit more up scale. One thing's for sure, whether you are a local or a visitor, this restaurant and the surrounding canvas provided free of charge by Mother Nature, will make anyone appreciate life on a tropical island.
"It's the best kept secret for locals on St. Croix," said Bill Kants, the restaurant's night manager. Kants said the secret to the restaurant's success is their top-notch service, and good food for a good price. "We have professional servers who know how to take care of the customers," Kants said, adding that the chef has been on island cooking for the last 14 years.
The owner of the restaurant and the adjoining hotel, Hibiscus Beach Resort, is Daniel Giannini, a lawyer and restaurateur from Long Island, N.Y. He came to St. Croix two years ago to buy a home and ended up buying the resort. Soon after he purchased it, a tropical rainstorm damaged the property. So almost right off the bat, Giannini had to redecorate and refurnish.
H2O, a Caribbean bistro, as the hand-painted sign along a masonry wall that welcomes guests proclaims, has an all-day menu, so you can have what you want when you want it. The kitchen is open for breakfast, dinner and late night dining. The Sunday brunch has over 20 items and is served with a complimentary Bellini, mimosa or Bloody Mary.
So if you want to put a little variety in your dining experience, veer off the main road and visit the great people at H2O restaurant. It's out of the way charm transports you to a quieter, more tranquil dining experience, complimented with exemplary service and unmatched atmosphere.
