June 28, 2004 – Old Stone Farmhouse chef Brian Katz and his former assistant, Catherine "CC" Colo, have formed a new venture – Blackbeard's Castle Catering.
The company will provide catering services at The Inn at Blackbeard's Castle, Hotel 1829's restaurant, Haagensen House, and Villa Notman.
Colo said that catering is available for corporate meetings, cocktail receptions, holiday parties, dinners, weddings, and receptions.

Blackbeard's Castle and Hotel 1829 will continue to operate as hotels, but the Inn at Blackbeard's Castle and Hotel 1829's restaurant are closed and will be used for catering events only. Haagensen House and Villa Notman will continue to operate as museums with catering available for functions.
"They still have historic walking tours," Colo said.
Colo is now the director of sales and catering at the Inn at Blackbeard's Castle. Katz will remain as chef at the Old Stone Farmhouse.
Michael Ball, representing his father, Baron Vernon Ball, purchased the complex known as Blackbeard's Castle in January 2001 and the family continues its ownership.
